Dry-cured, thinly-sliced prosciutto is the base for this Vino Pair.  As prosciutto ham melts in your mouth, it leaves a slightly salty flavor. Next in line is the Humboldt Fog®. By itself, Humboldt Fog® is buttery-creamy, floral cheese which has a clean citrusy finish. Cheese is a living culture and changes over time.  As Humboldt Fog® matures, the crumbly insides begins to develop more flavor as it's converted to a soft-ripened texture.  Especially, right under the rind, in what's called the "proteolysis" layer.

When the ham is combined with the subtle, tangy flavor of the Cypress Grove Humboldt Fog®, the mildly acidic flavors of the cheese break down the salty prosciutto.  The prosciutto also serves as sort-of-a-cracker to stack on.  Try including a small portion of rind with every bite and you'll be able to taste a more intense goat milk cheese flavor.  The distinctive layer of edible vegetable ash has very little flavor, but it defines the Humboldt Fog®.

Marcona almonds are often called the "Queen of the almonds" because they are so amazing.   The are not like the traditional California almonds.  There's no woody after taste.  Also, marconas don't take effort to chew.  They nearly melt in your mouth like a wafer of chocolate.  Imported from Spain, marcona almonds are blanched, roasted in olive oil, then tossed in sea salt before packaging.

Jam a few marcona almonds in the cheese on the ham "cracker," then drizzle with honey.   Roll it up and pop it in your mouth.  Once the multi-loop roller coster of flavors is over, the last flavor that spills over your tongue is a slight sweetness from the honey.   

The Troublemaker wine, a Hope Family product, is a Paso Robles / Central Coast blend that's a mixture of Syrah, Grenache, Mourvedre and Zinfandel.  The "Troublemaker" is unique because unlike most wines the "Troublemaker" is blended from multi-vintage varietals.  Most of the wine blend comes from the current year's wine stock, but one and two-year old wine is also blended to add complexity and structure which completes the wine and that completes this Vino Pair.

Wine makes your taste buds forget what they just sampled, so your next bite is just as good as the first.
