Zoe’s Meats was launched in 2007 by George Gavros and Charlie Hertz, two friends with a passion for food and a love for community and environment. George, founder and CEO, grew up helping his father in their store in Quincy, MA, graduated from Harvard with Honors, and then worked in food production and distribution. Charlie Hertz, co-founder and partner, graduated from the University of Wisconsin, with Honors in Microbiology, then worked evaluating USDA processing facilities. The company name came from George’s daughter, Zoe, a meat lover herself. They are an artisan cured meat company producing some of the finest charcuterie, with locations in Santa Rosa and Los Angeles, CA and Seattle, WA. Zoe’s Meats is also proud to be a community friendly and environmentally conscious company. Their charcuterie is made by using high quality, gluten free ingredients, and whenever possible using naturally occurring preservatives, like celery extract and sea salt. Striving to be environmentally conscious, Zoe’s also provides meats from sustainable sources.
Their mission of giving back to the community is shown by working directly with schools to set up school gardens or educational programs about sustainability and eating more healthfully. They also deliver their meats to local schools at NO profit. “We feel that by educating our children on the importance of good nutrition and sustaining our earth we are working to ensure a better, healthier future for them and our world.”
Their prosciutto is served in restaurants from San Francisco, Seattle to Boston, and New York. “We started with hogs raised without antibiotics and kept it simple. Just salt and 12 months of love (the period it takes to dry these legs).”- Zoe’s Meats
Zoe’s Meats Prosciutto is featured in the Honey, Marcona Almonds, Prosciutto Ham, Humboldt Fog® Cheese, and a Red Blend VinoPair.
