July's VinoPair is designed, not only to tantalize the tastebuds, but also to beat the summer heat.
This VinoPair starts with the classic combination of chardonnay and cheddar cheese. This is no ordinary cheddar or chardonnay, however.
The cheddar is aged cheddar from Homestead Creamery in Jamesport, MO, and is hand-crafted by an Amish Family. They call it Flory's Truckle. It's limited in production, but not in flavor. It melts in your mouth with a smooth texture and the remaining flavor is nut-overload.
The chardonnay is from a small producer in Washington State called Tamarack Cellars. This chardonnay is not your ordinary yellow color, it's golden in color. Tasting notes suggest apple crisp, apricot aromas, golden delicious apple, butterscotch, ripe pear and macadamia nut flavors. Make sure the wine is very cold. Refrigerator cold (37-40F) is perfect!
Slice the Volpi Pinot Grigio White Wine Salame into thin slices. Volpi is a 102-year-old St. Louis, MO producer of Italian salames using local ingredients and authentic recipes from Italy.
Next up is the Mancini Roasted Red Peppers. Made in the U.S.A, these peppers are the perfect accompaniment for this bite. When sliced into small squares, they fit perfectly on the sea salt crackers and provide the right amount of vinegar/sour flavor.
It's topped off with a few dried cranberries, which add the right amount of sweetness to the mix.
