VinoPair's August Pairing

August’s box is an amazing mixture of sweet and salty flavors, that truly come together to make an enjoyable experience.

This pairing starts off with a Firehook Multigrain Cracker baked with a tangy Eastern Mediterranean herb called Za’atar. It is a nutty, herby mixture of dried thyme, sumac, toasted sesame seeds, and sea salt.

Spread the Blue Chair Dry-Farmed Tomato Jam over the cracker. This tomato jam adds the sweet flavor you wouldn’t expect. Blue Chair Fruit Company, in California, uses an old method called dry farming the tomatoes for this jam. All irrigation to the rooted tomato plants is cut off, stressing the plant into looking for water deeper into the ground, thereby, producing a more intense, sweeter flavor.  Oh yeah!

The feta cheese is made by Dodoni, one of the leading Greek producers of dairy products. Feta, meaning “slice”, is exclusively made from sheep’s/goat’s milk. It is a soft cheese with tangy and salty flavors.

Fresh, juicy watermelon is the next sweet layer over the salty Feta cheese. This summertime classic adds another element of sweetness along with the Tomato Jam. Placing the tarragon leaf over the top completes the visual appeal and the flavor composition with this Vino Pair.

The Castello Di Monsanto Chianti Classico Riserva, from Tuscany region of Italy, ties in well with all of the flavors of this Vino Pair. The 2012 vintage marks the 50th Harvest of the Chianti Classico Riserva. It is made up of 90% Sangiovese grapes and 10% Canaiolo and Colorino grapes, making this “rich, intense, and complex”, with flavors of “currant, cherry and strawberry and spice.”
